Buffalo chicken is one of my all-time favorite foods. I love it in salad, macaroni and cheese, on pizza and on a sandwich – you just can’t go wrong. Since one of my goals this year is to make dinner once a week, I decided to change up the traditional stuffed peppers that I’m used to and make buffalo chicken stuffed peppers. It was super easy, tasted delicious, and is one of the healthiest ways to eat buffalo chicken.

  • 5 medium/large bell peppers
  • 2 chicken breasts
  • 1/2 cup hot sauce
  • 3/4 cup ranch dressing
  • 1 can of rotel
  • Mozzarella cheese


  • Preheat the oven to 350 degrees
  • Cook chicken so you can shred it (I cooked mine in the crockpot on high for about three hours)
  • Add shredded chicken, rotel, hot sauce and ranch dressing to a bowl. Mix well
  • Cut peppers in half longways, remove all seeds
  • Stuff peppers with chicken mixture. Top with mozzarella cheese
  • Bake in the oven for 20 minutes
